Pho

Last night I finally made it over to Pho Kim Long for some pho in Chinatown; it's been on my "places to check out" list for a while, so I was super excited to finally check it out. 

I can eat Vietnamese food morning, noon and night, especially pho. Pronounced "fa", it consists of rice noodles, beef broth, and strips of beef (or sometimes I like to switch it up with some fish or meat balls), and accompaniments on the side on limes, thai basil, bean sprouts and peppers. Forget chicken noodle soup when you're sick, you need to have some pho delivered to your door! The broth alone is amazing! *The broth for beef phở is generally made by simmering beef bones,  oxtails, flank steak, charred onion, charred ginger and spices. Seasonings can include Saigon cinnamon or other kinds of cinnamon as alternatives (may use stick or powder),star anise, roasted ginger, roasted onion, black cardamon, coriander seed, fennel seed, and clove.The broth takes several hours to make.
